Mit Salz und Zucker verr\u00fchren und eine Zeit &#8222;kalt garen&#8220; lassen. In der Zwischenzeit das Oliven\u00f6l erhitzen und die Currypaste (oder \u00e4hnliches) darin anr\u00f6sten. Anschliessend mit dem Gem\u00fcsesaft abl\u00f6schen (evtl. etwas Wei\u00dfwein dazu), einreduzieren lassen und dann das Gem\u00fcse dazu geben.
